Verwijder eventueel lelijke blaadjes van het witloof, snijd ze overlangs in twee, verwijder een deeltje van de harde kern en snijd het eveneens in stukken van 1 cm. Bak het witloof en de prei in een klontje boter, breng op smaak met peper, zout en nootmuskaat.<br>Laat het witloof uitlekken in een vergiet.<br>Verdeel het witloof over de voorgebakken deegbodem, verdeel er de in stukjes gesneden ham over en de gemalen kaas. Kluts de eieren met de eierdooiers met de room, breng op smaak met peper en zout giet dit over de groenten en bak de quiche gedurende ongeveer 30 minuten in de voorverwarmde oven.
